This quick and flavorful Cajun sausage pasta is cooked in one pot, combining smoky sausage, creamy sauce, and vibrant vegetables for a satisfying meal in just 30 minutes.

Ingredients

Meat

  • 10 ounces smoked sausage (Andouille or kielbasa)

Pasta

  • 4 ounces pasta (penne or rigatoni)

Seasonings

  • 2 tablespoons Cajun seasoning

Oil

  • 1 tablespoon olive oil

Vegetables

  • 1 cup diced bell peppers (mixed colors)
  • 1/2 cup diced onion

Broth & Cream

  • 2 cups low-sodium chicken broth ((add more if needed))
  • 1 cup heavy cream

Cheese

  • 1 cup shredded Parmesan cheese

Spices & Herbs

  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional, for extra spice)

Optional Greens

  • 1 cup fresh spinach (optional)

Garnish

Instructions 

  • Sauté sausage slices in a large pot until browned, then remove and set aside.
  • Add olive oil and sauté diced onions and bell peppers until softened.
  • Stir in Cajun seasoning, garlic powder, and cayenne pepper, then add chicken broth and bring to a boil.
  • Add pasta and cooked sausage to the pot, simmer until pasta is tender and sauce thickens.
  • Stir in heavy cream, Parmesan cheese, and spinach (if using), cook until heated through. Garnish with chopped parsley before serving.

Notes

For extra spice, add more cayenne pepper or hot sauce.
