Ingredients

Protein

  • 3-4 pieces boneless, skinless chicken breasts
  • 1 cup mixed bell peppers (sliced)
  • 1 medium zucchini (sliced into half-moons)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons olive oil

Instructions 

  • Wash and slice vegetables and garlic.
  • Heat olive oil and cook chicken until golden, then remove.
  • Sauté garlic and onion until fragrant.
  • Add bell peppers and zucchini; cook until tender.
  • Slice chicken, return to skillet, add soy sauce, and stir.
  • Cook for 3 more minutes and serve.
