A quick and flavorful one-pot meal combining beef, pasta, and taco seasonings for a satisfying dinner in just 30 minutes.

Ingredients

Meat

  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups beef broth
  • 8 ounces pasta (like rotini or penne)
  • 1 cup shredded cheddar cheese
  • to taste salt and pepper
  • optional fresh cilantro, for garnish

Instructions 

  • Brown the ground beef in a large pot over medium heat, about 5-7 minutes.
  • Add diced onion and minced garlic; cook until soft, about 3-4 minutes.
  • Stir in taco seasoning, diced tomatoes, and beef broth; bring to a boil.
  • Add pasta, reduce heat, cover, and simmer 10-12 minutes until al dente.
  • Remove from heat, stir in cheddar cheese until melted, season with salt and pepper, and garnish with cilantro if desired.

Notes

For a spicier kick, add some hot sauce or jalapeƱos.
