A quick and delicious one-pan meal featuring juicy chicken thighs and tender potatoes, perfect for a hassle-free dinner.

Ingredients

Protein

  • 4 pieces bone-in, skin-on chicken thighs

Vegetables

  • 1 pound baby potatoes, halved

Seasonings & Oils

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

Salt and Pepper

  • to taste salt and pepper

Garnish

  • as needed fresh herbs (like rosemary or thyme)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  • Arrange potatoes on one side of a baking sheet.
  • Season chicken thighs and place skin-side up on the other side of the sheet.
  • Bake for 35-40 minutes until cooked through and golden. Garnish with herbs before serving.
