A quick and flavorful one-pan dish combining tender chicken, rice, and sweet honey BBQ sauce for a satisfying meal.

Ingredients

Protein

  • 1 lb chicken thighs or breasts
  • 1 cup rice (long-grain or jasmine)
  • 2 cups chicken broth
  • 1/2 cup honey BBQ sauce
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • for garnish chopped green onions (optional)

Instructions 

  • Heat olive oil in a skillet, season chicken, and cook until browned. Remove and set aside.
  • Sauté onion and garlic in the same skillet until softened, then add bell peppers and cook briefly.
  • Add rice, chicken broth, and BBQ sauce; stir to combine. Return chicken to the skillet.
  • Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until rice is cooked.
  • Fluff rice, garnish with green onions if desired, and serve.

Notes

Use skinless chicken for a healthier option and adjust seasoning to taste.
