Instructions
Heat olive oil in a skillet over medium heat.
Sauté onion and garlic until softened (~3-4 min).
Add ground beef; cook until browned, then drain excess fat.
Stir in potatoes, broth, salt, pepper, paprika, and Italian seasoning. Simmer 25-30 min until potatoes are tender.
Uncover, stir, and cook until liquid reduces. Garnish with parsley if desired. Serve hot.
