This simple one-pan meal combines tender chicken breasts with sweet potatoes and optional green beans for a healthy and flavorful dinner.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 2 medium sweet potatoes (peeled and diced)
  • 1 cup green beans (optional)

Oils & Spices

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • to taste salt and pepper

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss sweet potatoes with olive oil, garlic powder, paprika, thyme, salt, and pepper.
  • Spread sweet potatoes on one side of a baking sheet and season chicken with salt, pepper, and olive oil.
  • Place chicken on the other side of the sheet, add green beans if using, and bake for 25-30 minutes.
  • Let rest for 5 minutes before serving.
