Instructions
In a large mixing bowl, combine the rolled oats, protein powder, ground flaxseed, and a pinch of salt.
Add the natural peanut butter, honey (or maple syrup), and vanilla extract to the dry ingredients.
Mix everything together until fully combined. If desired, fold in the mini chocolate chips and chopped nuts.
Once the mixture is well combined, use your hands to form small balls, about 1 inch in diameter.
Place the energy bites on a baking sheet lined with parchment paper.
Refrigerate for at least 30 minutes to help them firm up.
Store the energy bites in an airtight container in the refrigerator for up to one week.
