Ingredients

Dry Ingredients

  • 2 cups Rolled Oats
  • 1.5 cups Flour
  • 2 teaspoons Baking Powder
  • 0.5 teaspoon Cinnamon (optional)

Wet Ingredients

  • 2 ripe Bananas
  • 2 large Eggs
  • 0.75 cup Milk
  • 2 tablespoons Honey or Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 0.5 teaspoon Cinnamon (optional)

Add-ins

  • 0.5 cup Chocolate Chips

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a muffin tin.
  • Mash bananas, then mix with eggs, milk, honey, and vanilla.
  • Combine dry ingredients in a bowl. Mix into wet ingredients and fold in chocolate chips.
  • Divide batter into muffin cups, filling ¾ full. Top with oats if desired.
  • Bake for 20-25 minutes until golden and a toothpick comes out clean. Cool before serving.

Notes

For added flavor, sprinkle some oats on top before baking.
