  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium sweet potatoes (about 1 lb, diced)
  • 15 oz black beans (rinsed)
  • 3 cloves fresh garlic (minced)
  • 1 medium yellow onion (chopped)
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 2 tbsp olive oil
  • Fresh cilantro (optional)

Instructions 

  • Dice sweet potatoes and chop onions.
  • Heat olive oil in a skillet. Cook chicken until golden brown (5-7 minutes).
  • Stir in onions and garlic; cook until onions are translucent (3-4 minutes).
  • Add sweet potatoes, cumin, and paprika; stir to coat.
  • After 10 minutes, fold in black beans; cook for 5 minutes.
  • Remove from heat and garnish with cilantro. Serve hot.
