A comforting and creamy chicken soup with vegetables and herbs, perfect for cozy days.
Ingredients

boneless, skinless chicken breasts
Oil

olive oil
Vegetables

onion, diced

cloves
garlic, minced

carrots, sliced
2
stalks
celery stalks, sliced
Broth

chicken broth
Herbs & Seasonings

dried thyme

dried oregano

Cream & Peas

heavy cream

frozen peas

Instructions
Heat olive oil in a large pot over medium heat.
Sauté diced onion and minced garlic until translucent.
Add sliced carrots and celery; cook for 5 minutes.
Season chicken with salt, pepper, thyme, and oregano; add to the pot.
Pour in chicken broth, bring to boil, then simmer for 20 minutes.
Remove chicken, shred, return to pot, stir in cream and peas, cook 5 more minutes.
Notes
Adjust seasoning to taste and garnish with fresh parsley before serving.
