A comforting and creamy chicken soup with vegetables and herbs, perfect for cozy days.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts

Oil

  • 1 tablespoon olive oil

Vegetables

  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 3 pieces carrots, sliced
  • 2 stalks celery stalks, sliced

Broth

  • 6 cups chicken broth

Herbs & Seasonings

  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Cream & Peas

  • 1 cup heavy cream
  • 1 cup frozen peas

Garnish

  • as needed fresh parsley, chopped

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Sauté diced onion and minced garlic until translucent.
  • Add sliced carrots and celery; cook for 5 minutes.
  • Season chicken with salt, pepper, thyme, and oregano; add to the pot.
  • Pour in chicken broth, bring to boil, then simmer for 20 minutes.
  • Remove chicken, shred, return to pot, stir in cream and peas, cook 5 more minutes.

Notes

Adjust seasoning to taste and garnish with fresh parsley before serving.
