A delicious and hearty dish featuring tender chicken glazed with pure maple syrup, paired with roasted sweet potatoes for a comforting meal.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Sauces & Condiments

  • 1/4 cup pure maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon dijon mustard

Vegetables

  • 2 cloves garlic, minced
  • 2 large sweet potatoes, peeled and cubed

Oils & Spices

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Garnish

  • to taste fresh parsley for garnish

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix maple syrup, soy sauce, Dijon mustard, garlic, salt, and pepper.
  • Coat chicken with glaze and place in baking dish. Toss sweet potatoes with oil, paprika, salt, and pepper, then spread around chicken.
  • Bake for 25-30 minutes until cooked and tender. Rest briefly, then garnish with parsley and serve.
