A delicious and wholesome bowl combining roasted chicken, sweet potatoes, cabbage, and fresh pear slaw topped with avocado and toasted pecans.

Ingredients

Protein

  • 4 pieces chicken thighs (bone-in or boneless)
  • 0.25 cup maple dijon marinade

Vegetables

  • 2 medium sweet potatoes (cubed)
  • 2 cups chopped cabbage

Grains

  • 1 cup brown rice

Toppings

  • 1 cup pear slaw
  • 1 avocado avocado (sliced)
  • 0.25 cup toasted pecans

Instructions 

  • Roast chicken thighs in maple Dijon marinade.
  • Add sweet potatoes and cabbage to the sheet pan and roast.
  • Cook brown rice separately.
  • Assemble bowls with rice, roasted vegetables, sliced pear slaw, avocado, and pecans.

Notes

For extra flavor, brush the chicken with additional marinade before roasting.
