1champagne mango(peeled, seeded, and diced)
1Persian cucumber(diced)
¼red onion(minced and let sit for 15min)
3cupsarugula
1avocado(chopped)
½cupblueberries
¼cupwalnuts(toasted)
¼cupcilantro
Vinaigrette
2Tablespoonslime juice
1teaspoonmaple syrup
3Tablespoonsextra virgin olive oil
1Tablespoonfresh cilantro(chopped)
1teaspoongarlic powder
A pinchsea salt
A dashfreshly cracked black pepper
Instructions
In a small jar or bowl, whisk together all the ingredients of the vinaigrette.
In a bowl, add mango, cucumber, onion, arugula, avocado, blueberries, walnuts, and cilantro. Drizzle the dressing over the salad and toss. Enjoy!
