A comforting and creamy chicken macaroni soup perfect for chilly days, combining tender chicken, pasta, and cheese in a flavorful broth.

  • 2 cups cooked chicken, shredded
  • 1 cup elbow macaroni
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 unit onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • for garnish fresh parsley

Instructions 

  • Melt butter in a large pot, sauté onion, carrots, celery, and garlic until tender.
  • Add shredded chicken and cook for 2-3 minutes.
  • Pour in chicken broth, bring to boil, add macaroni and thyme, then simmer 8-10 minutes.
  • Stir in heavy cream and cheddar cheese until melted and creamy.
  • Season with salt and pepper, serve garnished with parsley.

Notes

For extra flavor, add a pinch of paprika or hot sauce.
