Ingredients

Spice Mix

  • 1.5 teaspoons chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon oregano
  • 0.5 teaspoon coriander
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon black pepper

Marinade

  • 3 tablespoons avocado oil (can sub olive oil)
  • 0.25 cup lime juice
  • 4 cloves garlic (thinly sliced)
  • 2 teaspoons hot sauce
  • 2 teaspoons brown sugar
  • 1/8 teaspoon cinnamon

Main Ingredients

  • 1.25 lbs skirt steak (see notes for other cut options)
  • to taste (about 1 tsp kosher salt per pound steak)
  • 1-2 tablespoons avocado oil (can sub olive oil)
  • 2 bell peppers (sliced, use assorted colors)
  • 1 small red onion (sliced)
  • 8-10 (6-inch) tortillas

Toppings

  • Mexican cheese
  • Sour cream
  • Avocado
  • Salsa or tomatoes
  • Jalapenos
  • Sliced limes
  • Cilantro

Instructions 

  • Preheat oven to 300° F. Warm tortillas in foil for 10-15 minutes.
  • Tenderize steak, season generously with salt.
  • Combine spices, reserve 1 teaspoon for vegetables, rub remaining on steak.
  • Marinate steak with oil, lime juice, garlic, hot sauce, brown sugar, and cinnamon for 25-30 minutes.
  • Sear steak in hot skillet for 3 minutes per side.
  • Rest steak before slicing.
  • Sauté peppers and onions with reserved seasoning for 5-7 minutes.
  • Slice steak thinly, return to skillet with vegetables, toss to combine.
  • Serve with warm tortillas and desired toppings.

Notes

For a spicier kick, add a pinch of cayenne pepper to the spice mix.
