A delicious baked pasta dish featuring Italian sausage, spinach, and melted cheeses, perfect for a hearty family dinner.

Ingredients

Pasta

  • 8 oz manicotti pasta tubes

Meat

  • 1.25 lbs Italian sausage

Vegetables

  • 1 item onion, finely diced
  • 2 cups chopped fresh spinach

Cheese

  • 8 oz mozzarella, shredded (divided)
  • 3/4 cup freshly grated parmesan cheese (divided)

Other ingredients

  • 1 item egg, slightly beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 24-oz jar spaghetti sauce

Instructions 

  • Cook manicotti in salted water according to package instructions. Drain and set aside.
  • Cook sausage and diced onion until browned; add spinach and cook until wilted. Cool slightly.
  • Mix sausage mixture with 1 cup mozzarella, 1/2 cup parmesan, egg, garlic powder, salt, and pepper.
  • Spread 1/2 cup sauce in a baking dish, stuff manicotti with meat mixture, and place in dish. Cover with remaining sauce.
  • Bake at 375°F (190°C) for 30 minutes, then top with remaining cheese and bake 20 minutes more. Rest before serving.

Notes

Cover with foil during initial baking to prevent cheese from over-browning.
