spaghetti sauce
Instructions
Cook manicotti in salted water according to package instructions. Drain and set aside.
Cook sausage and diced onion until browned; add spinach and cook until wilted. Cool slightly.
Mix sausage mixture with 1 cup mozzarella, 1/2 cup parmesan, egg, garlic powder, salt, and pepper.
Spread 1/2 cup sauce in a baking dish, stuff manicotti with meat mixture, and place in dish. Cover with remaining sauce.
Bake at 375°F (190°C) for 30 minutes, then top with remaining cheese and bake 20 minutes more. Rest before serving.
Notes
Cover with foil during initial baking to prevent cheese from over-browning.
