Ingredients

Main

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (casings removed)
  • 1 onion onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper bell pepper (chopped)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes (undrained)
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper salt and pepper
  • 1/2 cup grated Parmesan cheese
  • optional for garnish fresh parsley (chopped)

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Add sausage and cook until browned, breaking it apart.
  • Add onion, garlic, and bell pepper; cook until softened, about 5 minutes.
  • Stir in rice, broth, tomatoes, Italian seasoning, salt, and pepper; bring to boil.
  • Reduce heat, cover, and simmer 20 minutes until rice is tender.
  • Stir in Parmesan cheese until melted; serve garnished with parsley if desired.

Notes

For extra flavor, add a pinch of red pepper flakes or fresh basil.
