  • 2 cups cooked rice
  • 1 lb boneless, skinless chicken breasts, cubed
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Melt butter in a skillet, sauté garlic until fragrant, then cook chicken with seasonings until browned.
  • Mix cooked rice, chicken, and broth; transfer to a greased casserole dish.
  • Top with shredded cheese, cover, and bake for 25 minutes; uncover and bake 10 more minutes until bubbly.
  • Garnish with parsley and serve warm.

Notes

For extra flavor, add a pinch of red pepper flakes or your favorite herbs.
