  • 1.5 lbs skirt steak (cut into strips)
  • 1 large bell pepper (any color, sliced)
  • 1 large onion (sliced)
  • 1 packet fajita seasoning
  • 1 cup beef broth
  • 2 tablespoons olive oil
  • Optional toppings (sour cream, salsa, guacamole, shredded cheese, cilantro, tortillas)

Instructions 

  • Turn on the Instant Pot and select the 'Saute' function.
  • Add olive oil to the pot. Once heated, add the steak strips and cook until browned on all sides. This may need to be done in batches.
  • Add the sliced bell pepper and onion to the pot. Cook for a few minutes until slightly softened.
  • Sprinkle the fajita seasoning over the steak and vegetables. Stir well to coat everything evenly.
  • Pour in the beef broth. Deglaze the bottom of the pot, scraping up any browned bits.
  • Cancel the 'Saute' function. Secure the lid and set the Instant Pot to 'Manual' or 'Pressure Cook' on high pressure for 8 minutes.
  • Allow for a natural pressure release for 10 minutes, then quick release any remaining pressure.
  • Carefully remove the lid. If there is excess liquid, you can select 'Saute' again and cook it down to your desired consistency.
  • Serve the steak and vegetable mixture in warm tortillas with your favorite toppings.

Notes

For extra flavor, marinate the steak for at least 30 minutes before cooking.
