Instructions
Turn on the Instant Pot and select the 'Saute' function.
Add olive oil to the pot. Once heated, add the steak strips and cook until browned on all sides. This may need to be done in batches.
Add the sliced bell pepper and onion to the pot. Cook for a few minutes until slightly softened.
Sprinkle the fajita seasoning over the steak and vegetables. Stir well to coat everything evenly.
Pour in the beef broth. Deglaze the bottom of the pot, scraping up any browned bits.
Cancel the 'Saute' function. Secure the lid and set the Instant Pot to 'Manual' or 'Pressure Cook' on high pressure for 8 minutes.
Allow for a natural pressure release for 10 minutes, then quick release any remaining pressure.
Carefully remove the lid. If there is excess liquid, you can select 'Saute' again and cook it down to your desired consistency.
Serve the steak and vegetable mixture in warm tortillas with your favorite toppings.
Notes
For extra flavor, marinate the steak for at least 30 minutes before cooking.
