This slow cooker French onion soup is a comforting and flavorful dish, perfect for chilly days.
Ingredients

large yellow onions

(such as Gruyère or Swiss)
Instructions
In a large skillet, melt the butter and olive oil over medium heat.
Add the sliced onions and sugar, cooking until the onions are caramelized, about 20-25 minutes, stirring frequently.
Once caramelized, add the minced garlic and cook for an additional 1-2 minutes until fragrant.
Transfer the caramelized onions and garlic to the slow cooker.
Pour in the halal beef broth and water, followed by the soy sauce, dried thyme, bay leaf, salt, and pepper. Stir to combine.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
About 30 minutes before serving, preheat your oven to broil.
Ladle the soup into oven-safe bowls, top each with a slice of baguette, and sprinkle generously with shredded cheese.
Place the bowls on a baking sheet and broil in the oven until the cheese is bubbly and golden, about 3-5 minutes.
Carefully remove from the oven and let cool slightly before serving.
Notes
For a vegetarian version, use vegetable broth instead of beef broth.
