This slow cooker French onion soup is a comforting and flavorful dish, perfect for chilly days.

Ingredients

  • In a large skillet, melt the butter and olive oil over medium heat.
  • Add the sliced onions and sugar, cooking until the onions are caramelized, about 20-25 minutes, stirring frequently.
  • Once caramelized, add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Transfer the caramelized onions and garlic to the slow cooker.
  • Pour in the halal beef broth and water, followed by the soy sauce, dried thyme, bay leaf, salt, and pepper. Stir to combine.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • About 30 minutes before serving, preheat your oven to broil.
  • Ladle the soup into oven-safe bowls, top each with a slice of baguette, and sprinkle generously with shredded cheese.
  • Place the bowls on a baking sheet and broil in the oven until the cheese is bubbly and golden, about 3-5 minutes.
  • Carefully remove from the oven and let cool slightly before serving.

Notes

For a vegetarian version, use vegetable broth instead of beef broth.
