Ingredients

Protein

  • 2 pieces salmon fillets
  • 1 tablespoon olive oil
  • salt and pepper to taste salt and pepper
  • 1/4 cup hot honey
  • 1 cup cooked rice (white or brown)
  • 1 cup mixed greens (spinach, arugula, or kale)
  • 1/2 avocado avocado, sliced
  • 1/4 cup cucumber, diced
  • 1/4 cup cherry tomatoes, halved

Garnish

  • sesame seeds for garnish sesame seeds (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Pat salmon dry, season with salt and pepper.
  • Heat olive oil in oven-safe skillet, sear salmon skin-side down for 3-4 minutes until crispy.
  • Flip salmon, brush with hot honey, then bake for 6-8 minutes until cooked through.
  • Assemble bowls with rice and greens, top with salmon, avocado, cucumber, and tomatoes.
  • Drizzle remaining hot honey, garnish with sesame seeds if desired, and serve immediately.

Notes

For extra flavor, sprinkle with sesame seeds or add a squeeze of lemon.
