Ingredients

Salmon

  • 4 fillets salmon fillets
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon ground cumin
  • to taste salt and pepper
  • 2 cups cooked rice or quinoa
  • 1 avocado sliced avocado
  • 1 cup cherry tomatoes (halved)
  • 1 cup corn (fresh or canned)
  • 1/4 cup chopped cilantro

Instructions 

  • Whisk honey, lime juice, soy sauce, olive oil, garlic, cumin, salt, and pepper.
  • Marinate salmon in the mixture for 15 minutes.
  • Grill or bake salmon until cooked through, about 5-7 minutes per side or 12-15 minutes.
  • Prepare rice or quinoa as directed.
  • Assemble bowls with rice, salmon, avocado, tomatoes, corn, and cilantro. Drizzle with remaining marinade.

Notes

For extra flavor, add a squeeze of lime before serving.
