A delicious and healthy dish featuring tender honey-glazed salmon paired with crispy roasted potatoes and optional greens.

Ingredients

Main ingredients

  • 1.5 lbs baby gold or red potatoes (halved)
  • 1 lb salmon fillet (cut into 4 portions)
  • 3 tablespoons olive oil (divided)
  • 2 tablespoons honey
  • 3 garlic cloves garlic (minced)
  • 1 tablespoon lemon juice
  • 1 teaspoon soy sauce or tamari
  • 1 teaspoon smoked paprika
  • to taste salt and black pepper
  • 0.5 lb broccoli florets or green beans (optional)
  • for serving fresh chopped parsley and lemon wedges

Instructions 

  • Preheat oven to 425°F (218°C). Toss potatoes with 2 tbsp olive oil, salt, pepper, and paprika; roast 20 minutes.
  • Whisk honey, garlic, lemon juice, soy sauce, remaining olive oil, salt, and pepper to make the glaze.
  • Push potatoes to one side of the pan, add salmon (skin side down) and optional veggies. Brush salmon with glaze.
  • Roast for 10–12 minutes until salmon is flaky and potatoes are golden.
  • Garnish with parsley and serve hot with lemon wedges.

Notes

Ensure not to overcook the salmon for best flakiness and flavor.
