Ingredients

Protein

  • 1 pound chicken breasts (cut into bite-sized pieces)

Grains

  • 1 cup long-grain rice

Broth & Sauces

  • 2 cups chicken broth
  • 1/2 cup honey
  • 1/2 cup bbq sauce

Oils & Seasonings

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Vegetables

  • 1 cup mixed vegetables ((e.g., bell peppers, broccoli, carrots))

Garnish

Instructions 

  • Heat olive oil in a skillet over medium heat. Cook chicken until browned, about 5-7 minutes.
  • Mix honey and BBQ sauce; pour over chicken and coat evenly.
  • Add rice and chicken broth; bring to a boil, then simmer covered for 15 minutes.
  • Stir in vegetables, cover, and cook for 5-7 minutes until tender.
  • Remove from heat, let sit covered for 5 minutes, then fluff and garnish with green onions.

Notes

For extra flavor, marinate the chicken beforehand or add a splash of soy sauce.
