  • 4 fillets salmon fillets
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil
  • 4 medium potatoes, diced
  • 1 cup shredded cheddar cheese
  • to taste salt and pepper
  • for garnish fresh parsley

Instructions 

  • Preheat oven to 400°F (200°C). Mix honey, garlic, soy sauce, salt, and pepper to make marinade.
  • Marinate salmon for 15 minutes, then bake for 12-15 minutes.
  • Boil diced potatoes until tender, then sauté in olive oil until golden.
  • Sprinkle cheese over potatoes and cover until melted. Garnish with parsley.

Notes

For extra flavor, add a squeeze of lemon before serving.
