A hearty and comforting Hobo Casserole featuring ground beef, potatoes, and plenty of cheese. This easy-to-make dish is perfect for a family dinner.

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4-5 medium potatoes, thinly sliced
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon paprika
  • Salt and pepper to taste
  • 0.5 cup beef broth or water
  • 0.25 cup milk (optional, for creaminess) (optional)
  • Fresh parsley for garnish (optional) (optional)

Instructions 

  • Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • Cook ground beef in olive oil until browned. Drain excess fat.
  • Add onion and garlic to the skillet and cook until softened.
  • Layer potatoes over the ground beef in the baking dish. Season with salt, pepper, Italian seasoning, and paprika.
  • Sprinkle cheddar and Parmesan cheese over the beef. Pour beef broth around the edges. Drizzle with milk (optional).
  • Cover with foil and bake for 30 minutes. Remove foil and bake for 15-20 minutes until potatoes are tender and cheese is golden.
  • Garnish with parsley and serve hot.

Notes

For a richer flavor, use a combination of different cheeses. You can also add other vegetables like bell peppers or mushrooms.
