These high protein peanut butter oatmeal balls are a delicious and nutritious snack, perfect for a quick energy boost.

Instructions
In a large mixing bowl, combine the rolled oats, natural peanut butter, honey (or maple syrup), and protein powder.
Add the ground flaxseed, vanilla extract, and salt to the mixture, and stir until well combined.
If the mixture is too dry, add a little water, one tablespoon at a time, until it reaches a sticky but moldable consistency.
Fold in the mini chocolate chips evenly throughout the mixture.
Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands.
Place the balls on a baking sheet lined with parchment paper.
Refrigerate the oatmeal balls for at least 30 minutes to firm up.
Once set, store the oatmeal balls in an airtight container in the refrigerator for up to one week.
Notes
You can substitute honey with maple syrup for a vegan option.
