Instructions 

  • In a large mixing bowl, combine the rolled oats, natural peanut butter, honey (or maple syrup), and protein powder.
  • Add the ground flaxseed, vanilla extract, and salt to the mixture, and stir until well combined.
  • If the mixture is too dry, add a little water, one tablespoon at a time, until it reaches a sticky but moldable consistency.
  • Fold in the mini chocolate chips evenly throughout the mixture.
  • Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands.
  • Place the balls on a baking sheet lined with parchment paper.
  • Refrigerate the oatmeal balls for at least 30 minutes to firm up.
  • Once set, store the oatmeal balls in an airtight container in the refrigerator for up to one week.

Notes

You can substitute honey with maple syrup for a vegan option.
