Ingredients

Pasta

  • 8 oz penne pasta

Meat

  • 1 lb lean ground beef

Vegetables

  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Canned Goods

  • 1 can (15 oz) diced tomatoes (with juices)

Broth

  • 1 cup low-sodium beef broth

Dairy

  • 1/2 cup plain greek yogurt
  • 1/4 cup grated parmesan cheese

Seasonings

  • 1 tbsp italian seasoning
  • to taste salt and pepper

Others

  • for cooking olive oil

Instructions 

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a skillet, heat olive oil, sauté onion and garlic, then add ground beef and cook until browned. Stir in tomatoes, broth, Greek yogurt, Parmesan, Italian seasoning, salt, and pepper. Simmer briefly.
  • Add cooked pasta to the skillet and toss to combine. Serve garnished with fresh herbs.

Notes

For extra flavor, add a sprinkle of fresh herbs before serving.
