  • 3 ripe bananas (mashed)
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1/3 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 1/2 cups gluten-free oat flour
  • 1/4 cup cocoa powder
  • 1 scoop chocolate or vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • dark chocolate chips or chopped nuts (Optional)

Instructions 

  • Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  • Mix mashed bananas, eggs, Greek yogurt, maple syrup, and vanilla until smooth.
  • Add oat flour, cocoa powder, protein powder, baking powder, baking soda, and salt. Stir until just combined.
  • Fold in optional chocolate chips or nuts if using.
  • Pour batter into prepared loaf pan and smooth the top.
  • Bake for 35-40 minutes until a toothpick inserted comes out mostly clean.
  • Let cool before slicing and serving.

Notes

For a richer flavor, use dark cocoa powder.
