Ingredients

Chicken Marinade

  • 1 pound boneless, skinless chicken breast (cut into 1-inch cubes)
  • 1/2 cup plain Greek yogurt (divided)
  • 2 tablespoons lemon juice
  • 2 teaspoons garam masala (divided)
  • 1 teaspoon ground cumin (divided)
  • 1 teaspoon ground coriander (divided)
  • 1/2 teaspoon turmeric powder (divided)
  • 1/2 teaspoon chili powder (divided)
  • 1 teaspoon kosher salt (divided)

Sauce

  • 2 tablespoons vegetable oil (divided)
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1 (14-ounce) can crushed tomatoes
  • 1/2 cup low-fat milk
  • 1/4 cup chopped fresh cilantro leaves

Instructions 

  • Combine yogurt, lemon juice, garam masala, cumin, coriander, turmeric, chili powder, and salt in a bowl.
  • Add chicken, coat, cover, and refrigerate for 1-4 hours.
  • Preheat grill to medium-high and oil the grates.
  • Thread chicken onto skewers and grill for 5-7 minutes per side. Remove and set aside.
  • Heat oil in a skillet over medium heat.
  • Add onion and cook until soft and golden, about 7 minutes.
  • Add garlic and ginger and cook for 1 minute until fragrant.
  • Stir in remaining garam masala, cumin, coriander, turmeric, chili powder, and salt. Cook for 1 minute.
  • Pour in crushed tomatoes and simmer for 10 minutes.
  • Reduce heat, stir in remaining yogurt and milk until smooth.
  • Add grilled chicken and simmer for 5 minutes.
  • Remove from heat, sprinkle with cilantro, and serve.

Notes

For a richer flavor, use full-fat Greek yogurt and whole milk.
