Ingredients

dried green or brown lentils
(rinsed and drained)

medium onion

celery stalks

diced tomatoes

Instructions
In the slow cooker, combine the lentils, onion, carrots, celery, and garlic.
Add the diced tomatoes, vegetable broth, cumin, thyme, paprika, and bay leaf.
Season with salt and pepper to taste, then stir to combine all the ingredients.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the lentils are tender.
About 15 minutes before serving, stir in the chopped spinach or kale and let it wilt.
Before serving, remove the bay leaf and stir in the lemon juice for added brightness.

Feel free to add other vegetables or spices according to your taste.
