Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • 4 cups potatoes, thinly sliced (about 3–4 medium potatoes)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 0.5 cup milk
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika (optional)
  • 2 tablespoons chopped parsley or green onion (for garnish, optional)

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch dish or skillet.
  • Cook ground beef in a skillet until browned; add onion and garlic, sauté 3 minutes. Drain excess fat.
  • Mix in salt, pepper, and paprika; spread beef in dish. Layer sliced potatoes and sprinkle with 1 cup cheese.
  • Whisk soup and milk; pour over potatoes and cheese. Top with remaining cheese.
  • Cover with foil; bake 30 minutes. Remove foil; bake 15 more minutes until golden and tender.
  • Rest 5–10 minutes; garnish with parsley or green onions. Slice and serve.

Notes

For a creamier texture, let the casserole rest before serving.
