This Healthy Pumpkin Spinach Lasagna is a nutritious twist on a classic dish, combining the flavors of pumpkin and spinach for a delicious and wholesome meal.
In a large mixing bowl, combine the pumpkin puree, ricotta cheese, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
In a separate bowl, sauté the chopped spinach in olive oil over medium heat until wilted, about 2-3 minutes. Remove from heat and set aside.
Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
Layer 3 lasagna noodles over the sauce. Spread half of the pumpkin mixture over the noodles, followed by half of the sautéed spinach, and a third of the mozzarella cheese.
Repeat the layering process by adding another 3 noodles, the remaining pumpkin mixture, the remaining spinach, and another third of the mozzarella cheese.
Top with the final 3 noodles, the remaining marinara sauce, and sprinkle with the remaining mozzarella and Parmesan cheese.
Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
Allow to cool for 10 minutes before slicing and serving.
Notes
You can substitute the ricotta cheese with cottage cheese for a lighter option.
