This Healthy Pumpkin Spinach Lasagna is a nutritious twist on a classic dish, combining the flavors of pumpkin and spinach for a delicious and wholesome meal.

Instructions 

  • Preheat the oven to 375°F (190°C).
  • In a large mixing bowl, combine the pumpkin puree, ricotta cheese, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
  • In a separate bowl, sauté the chopped spinach in olive oil over medium heat until wilted, about 2-3 minutes. Remove from heat and set aside.
  • Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
  • Layer 3 lasagna noodles over the sauce. Spread half of the pumpkin mixture over the noodles, followed by half of the sautéed spinach, and a third of the mozzarella cheese.
  • Repeat the layering process by adding another 3 noodles, the remaining pumpkin mixture, the remaining spinach, and another third of the mozzarella cheese.
  • Top with the final 3 noodles, the remaining marinara sauce, and sprinkle with the remaining mozzarella and Parmesan cheese.
  • Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  • Allow to cool for 10 minutes before slicing and serving.

Notes

You can substitute the ricotta cheese with cottage cheese for a lighter option.
