Ingredients

Protein

  • 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)

Oil

  • 2 tablespoons olive oil

Vegetables

  • 1 chopped bell pepper
  • 1 sliced zucchini
  • 1 cup broccoli florets

Aromatics and Spices

  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • to taste salt and pepper

Liquids

  • 1 cup low-sodium chicken broth

Garnish

  • fresh parsley for garnish

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Add chicken, season with salt, pepper, oregano, and paprika; cook until browned, 5-7 minutes.
  • Add garlic; cook 1 minute until fragrant.
  • Stir in bell pepper, zucchini, and broccoli; cook 5 minutes until tender.
  • Pour in chicken broth; simmer 5 minutes until cooked through and slightly thickened. Garnish with parsley and serve.

Notes

Feel free to add more vegetables or adjust seasonings to taste.
