Ingredients

Protein

  • 2 large chicken breasts, cooked and diced

Vegetables

  • 4 cups broccoli florets, steamed

Carbohydrates

  • 2 cups cooked brown rice

Dairy & Eggs

  • 1 cup greek yogurt
  • 1 cup shredded cheddar cheese

Other

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 1 teaspoon paprika
  • 2 tablespoons chopped parsley (for garnish)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Heat olive oil, sauté onion and garlic until fragrant, about 3-4 minutes.
  • Mix Greek yogurt, chicken broth, half cheese, salt, pepper, and paprika to make sauce.
  • Combine chicken, broccoli, rice, and sautéed onions; pour sauce and mix.
  • Transfer to a greased dish, top with remaining cheese, and bake 20-25 minutes.
  • Garnish with chopped parsley before serving.
