A quick and flavorful sheet pan meal combining tender chicken, sweet pineapple, and colorful peppers for a tropical-inspired dinner.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken thighs
  • 1 cup pineapple chunks (fresh or canned)

Vegetables

  • 1 red bell pepper red bell pepper, sliced
  • 1 green bell pepper green bell pepper, sliced
  • 1 red onion red onion, sliced

Sauces & Oils

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger

Serving & Garnish

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix soy sauce, honey, olive oil, garlic powder, ginger, salt, and pepper.
  • Coat chicken with marinade and arrange on a sheet pan with vegetables and pineapple.
  • Bake for 25-30 minutes until cooked through.
  • Serve over rice or quinoa, garnished with green onions.

Notes

Adjust salt and ginger to taste for best flavor.
