A quick and flavorful ground chicken dish perfect for weeknight dinners, served over rice or pasta.

Ingredients

Meat

  • 1 pound ground chicken
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 medium onion (diced)
  • 1 medium bell pepper (chopped)
  • 2 tablespoons tomato paste
  • 0.25 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 0.5 teaspoon chili flakes (optional)
  • to taste Salt and pepper
  • 2 tablespoons fresh parsley (chopped)
  • for serving Cooked rice or pasta

Instructions 

  • Chop onion, mince garlic, and chop bell pepper.
  • Heat oil in a skillet, sauté garlic and onion for 2-3 minutes.
  • Add ground chicken, cook 5-7 minutes until browned, season with salt, pepper, paprika, and cumin.
  • Add bell pepper, cook 3-4 minutes, then stir in tomato paste, broth, and soy sauce. Simmer 5 minutes.
  • Stir in parsley, serve over rice or pasta.

Notes

Feel free to add more vegetables or adjust seasonings to taste.
