Delicious and hearty ground beef enchiladas perfect for a quick weeknight dinner.
Ingredients

shredded cheddar or Monterey Jack cheese

onion, diced

garlic, minced
Instructions
Preheat oven to 375°F (190°C).
Cook beef and onions until translucent (5-7 min).
Add garlic, cumin, chili powder; sauté 1 min.
Fill tortillas with beef mixture, roll, and place in baking dish.
Pour enchilada sauce, sprinkle cheese, and bake 20-25 min.
Notes
Use store-bought enchilada sauce for convenience.
