Delicious and hearty ground beef enchiladas perfect for a quick weeknight dinner.

Ingredients

Meat and Dairy

  • 1 lb lean ground beef
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook beef and onions until translucent (5-7 min).
  • Add garlic, cumin, chili powder; sauté 1 min.
  • Fill tortillas with beef mixture, roll, and place in baking dish.
  • Pour enchilada sauce, sprinkle cheese, and bake 20-25 min.

Notes

Use store-bought enchilada sauce for convenience.
