A hearty and easy-to-make casserole combining ground beef, vegetables, and rice topped with cheese for a satisfying meal.

Ingredients

Meat

  • 1 pound lean ground beef
  • 1 diced onion
  • 2 cloves garlic (minced)

Vegetables

  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can cream of mushroom soup
  • 1 cup beef broth
  • to taste Salt and pepper
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese
  • Optional fresh herbs for garnish

Instructions 

  • Preheat oven to 350°F (175°C) and grease a baking dish.
  • Cook ground beef until browned; add onion and garlic, sauté until tender.
  • Mix in vegetables, mushroom soup, and beef broth; season with salt and pepper.
  • Layer rice in the dish, top with beef mixture, sprinkle cheese, then bake covered for 25-30 minutes.
  • Remove foil last 10 minutes to brown cheese; garnish with herbs before serving.

Notes

You can add extra herbs or spices for more flavor.
