Ingredients

Meat

  • 1 pound ground beef

Oil

  • 2 tablespoons olive oil

Vegetables

  • 1 medium onion, diced
  • 1 red bell pepper, diced red bell pepper
  • 3 cloves garlic, minced
  • 3 medium russet potatoes, diced into ½-inch cubes

Spices and seasonings

  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon cumin

Tomato paste

  • 1 tablespoon tomato paste

Broth and cheese

  • ½ cup beef broth or water
  • ½ cup shredded cheddar cheese (optional)

Garnish

  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions 

  • Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, about 5 minutes.
  • Add diced onion, bell pepper, and garlic; cook until vegetables are tender, about 5 minutes.
  • Stir in diced potatoes, spices, tomato paste, and beef broth. Cover and simmer until potatoes are cooked through, about 10 minutes.
  • Optional: sprinkle shredded cheddar cheese on top and let melt for 2 minutes. Garnish with chopped parsley before serving.

Notes

For a healthier option, use lean ground beef and reduce added salt.
