Instructions
Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, about 5 minutes.
Add diced onion, bell pepper, and garlic; cook until vegetables are tender, about 5 minutes.
Stir in diced potatoes, spices, tomato paste, and beef broth. Cover and simmer until potatoes are cooked through, about 10 minutes.
Optional: sprinkle shredded cheddar cheese on top and let melt for 2 minutes. Garnish with chopped parsley before serving.
Notes
For a healthier option, use lean ground beef and reduce added salt.
