A hearty and comforting casserole combining seasoned ground beef, tender potatoes, and melted cheese, perfect for a family dinner.

Ingredients

Meat and Potatoes

  • 1 pound ground beef
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 0.5 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 0.5 teaspoon paprika

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook onion and garlic in olive oil until fragrant. Add beef with seasonings; cook until browned. Stir in broth and simmer.
  • Mix cooked beef with diced potatoes, sour cream, and half the cheese. Transfer to baking dish, top with remaining cheese.
  • Bake covered for 30 minutes, then uncovered for 10-15 minutes until bubbly and golden.
  • Let rest for 10 minutes before serving.

Notes

For a creamier texture, add a splash of milk or more sour cream before baking.
