Ingredients

  • 1 pound baby carrots
  • 2 tablespoons olive oil
  • 1 lemon lemon (zested and juiced)
  • 1/4 cup fresh mint leaves, chopped
  • to taste salt and pepper

Instructions 

  • Preheat the grill to medium-high heat.
  • Combine carrots, olive oil, lemon zest, lemon juice, salt, and pepper; toss to coat.
  • Grill carrots for 10-15 minutes, turning until tender and grill marks appear.
  • Remove from grill and toss with chopped mint.
  • Serve warm as a side dish.

Notes

For extra flavor, add a drizzle of honey or sprinkle with additional herbs.
