  • 2 lb flank steak

Marinade

  • ¼ cup olive oil
  • ¼ cup soy sauce
  • ¼ cup fresh lime juice
  • 2 tbsp brown sugar
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 red bell pepper, sliced
  • 1 yellow pepper, sliced
  • 1 green pepper, sliced
  • 1 medium yellow onion, halved and sliced
  • 12-14 (6-inch) flour or corn tortillas, warmed
  • 1 ripe avocado, sliced, for garnish
  • Salsa, for garnish
  • Fresh flat-leaf parsley, chopped, for garnish

Instructions 

  • Marinate steak in a mixture of olive oil, soy sauce, lime juice, brown sugar, cumin, chili powder, salt, and pepper for at least 2 hours. Reserve some marinade for the peppers and onions.
  • Grill steak over medium-high heat for 6 minutes per side, then let rest for 10 minutes.
  • Cook peppers and onions in a skillet until slightly charred.
  • Slice steak against the grain and assemble fajitas with steak, peppers, onions, avocado, salsa, and parsley.

Notes

For extra flavor, add a squeeze of lime juice to the cooked peppers and onions.
