Ingredients

Protein

  • 4 pieces chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon honey

Mashed Potatoes

  • 2 pounds potatoes, peeled and chopped
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter

Pan Sauce

  • 1 cup chicken broth
  • 1 tablespoon soy sauce

Instructions 

  • Preheat oven to 400°F (200°C). Mix olive oil, garlic, herbs, honey, salt, and pepper; coat chicken and bake 25-30 mins.
  • Boil potatoes until tender, then drain. Mash with cream and butter; season with salt and pepper.
  • Simmer chicken broth and soy sauce to make pan sauce.
  • Serve chicken over mashed potatoes, drizzle with pan sauce.

Notes

For extra flavor, garnish with fresh herbs before serving.
