A quick and flavorful sheet pan dinner featuring tender chicken breasts, roasted vegetables, and a cheesy Parmesan topping, perfect for an easy weeknight meal.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 2 cups broccoli florets
  • 2 cups baby carrots
  • 1 cup cherry tomatoes

Cheese & Seasonings

  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon italian seasoning
  • to taste salt and pepper
  • for garnish fresh parsley (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Mix olive oil, garlic, Italian seasoning, salt, and pepper.
  • Toss chicken with the mixture, then arrange on a sheet pan.
  • Add vegetables around the chicken, drizzle remaining mixture, and sprinkle Parmesan.
  • Bake for 25-30 minutes until cooked and tender. Garnish with parsley if desired.

Notes

For extra flavor, marinate the chicken beforehand or add your favorite herbs.
