  • 2 pounds russet potatoes, peeled and cut into chunks
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1/4 cup unsalted butter, softened
  • 1/2 cup heavy cream
  • salt and pepper to taste
  • 1 large egg
  • fresh parsley, chopped (for garnish)

Instructions 

  • Boil potatoes until tender, then drain and mash with garlic, butter, cream, Parmesan, salt, and pepper.
  • Mix in egg and yolk, then pipe onto a baking sheet.
  • Bake at 400°F (200°C) for 20-25 minutes until golden.
  • Garnish with chopped parsley before serving.

Notes

For extra flavor, add a pinch of nutmeg or a sprinkle of additional Parmesan on top before baking.
