Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 1 pound baby potatoes, halved

Oils & Vinegars

  • 0.25 cup olive oil

Garlic & Herbs

  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Cheese

  • 0.5 cup grated parmesan cheese

Garnish

  • fresh parsley, chopped (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix olive oil, garlic, herbs, salt, and pepper; toss potatoes and coat chicken.
  • Arrange potatoes and chicken on a baking sheet; sprinkle with Parmesan.
  • Bake for 25-30 minutes until cooked and tender.
  • Garnish with chopped parsley before serving.

Notes

For extra flavor, sprinkle additional Parmesan or herbs before baking.
