Instructions
Preheat oven to 400°F (200°C).
Toss potatoes with 2 tbsp olive oil, salt, pepper, thyme, and paprika. Spread on a baking sheet.
Roast potatoes for 20-25 minutes, or until tender and slightly browned.
Season steak with salt and pepper.
Heat 1 tbsp olive oil and 2 tbsp butter over medium-high heat in a large skillet.
Sear steak for 3-4 minutes per side for medium-rare. Remove steak and let rest.
Melt remaining 2 tbsp butter in the same skillet. Add garlic and cook for 1 minute, until fragrant.
Slice steak against the grain. Serve steak and potatoes topped with garlic butter and fresh parsley.
Notes
For best results, use a meat thermometer to ensure the steak is cooked to your desired doneness.
