A delicious and hearty meal featuring tender steak and flavorful potatoes, all bathed in a rich garlic butter sauce. Perfect for a satisfying dinner.

  • 1.5 lbs steak (ribeye, New York strip, or sirloin)
  • 1.5 lbs baby potatoes, quartered
  • 4 tbsp butter, divided
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 0.5 tsp paprika
  • to taste Salt and pepper
  • Fresh parsley, chopped (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss potatoes with 2 tbsp olive oil, salt, pepper, thyme, and paprika. Spread on a baking sheet.
  • Roast potatoes for 20-25 minutes, or until tender and slightly browned.
  • Season steak with salt and pepper.
  • Heat 1 tbsp olive oil and 2 tbsp butter over medium-high heat in a large skillet.
  • Sear steak for 3-4 minutes per side for medium-rare. Remove steak and let rest.
  • Melt remaining 2 tbsp butter in the same skillet. Add garlic and cook for 1 minute, until fragrant.
  • Slice steak against the grain. Serve steak and potatoes topped with garlic butter and fresh parsley.

Notes

For best results, use a meat thermometer to ensure the steak is cooked to your desired doneness.
