Ingredients

Chicken and Vegetables

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or monterey jack)
  • 1 cup bell peppers, sliced
  • 0.5 cup onion, sliced
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and pepper
  • for serving sour cream
  • for serving salsa

Instructions 

  • Heat 1 tbsp olive oil in a skillet, sauté onions and peppers until softened.
  • Mix shredded chicken with cumin, paprika, salt, and pepper.
  • Add cooked vegetables to chicken, then assemble tortillas with filling and cheese.
  • Cook folded tortillas in skillet until golden and cheese melts, about 2-3 minutes per side.
  • Cut into wedges and serve with sour cream and salsa.
